Over the years I have tried what feels like a million different Gluten Free flour blends. Let’s be clear that I am no stranger to using the store bought pre-mixed Gluten Free flour blends and for the most part I find many of them to be decent enough. That being said, as a Pastry Chef, I thrive on consistency. For this reason it is always my preference to use my own mix of flours, starches and gums to achieve the best taste and texture possible.

Most of the recipes you find on my site (unless stated otherwise) have been created, tested and perfected using the below blend. I will often also test the recipe using the brand Cup4Cup as I find this blend to be the closest to mine in flavour and texture. It is widely available in North American, online and in many of the major grocery stores.

Gluten Free Flour Blend

Because you need to buy five different ingredients to make this Gluten Free flour blend. I recommend making a large batch so you can store it in the pantry and have it ready for whenever the baking bug strikes. So, 1 cup of flour equals approx 140 grams. I usually make 5-10 cups or 700-1400 grams of Gluten Free All-Purpose Flour Blend at one time.

Kira’s Gluten Free AP Flour Blend

This Gluten Free All-Purpose Flour Blend is what I keep in my pantry. The combination of flours, starch, protein and gum all work together beautifully and lend well to pastry. It is also great for cookies and cakes.
I recommend making 5-10 cups at a time so you always have some available for when the baking bug hits.
Servings: 1 Cup (140g)

Ingredients

  • 56 g Fine White Rice Flour
  • 40 g Potato Starch
  • 30 g Corn Flour
  • 12 g Dry Skim Milk Powder (non-fat)
  • 4 g Xanthan Gum

Instructions

  • Combine all the ingredients in a large bowl and whisk until evenly combined. Transfer to an airtight container and store in a cool, dry place.
